I have the unique privilege of being both gluten free and dairy free. This has turned out to be a blessing in disguise. However, I would like to eat more than just meat and potatoes. Here is a recipe that I think I have officially perfected, to the point where I can share with others! They are extraordinary for breakfast or dessert. Happy Baking!
Pumpkin Chocolate Chip Muffins:
Oat Flour- 2 cups
Pumpkin Puree (No added sugar)- 1 cup
Eggs- 2
Baking Soda- 1 teaspoon
Baking Powder- 1 teaspoon
Chocolate Chips (I prefer Lily’s semi-sweet)- 1/2 cup
Goji Berries (optional)- 1/4 cup
Coconut Sugar- 1/2 cup
Salt- 1/2 teaspoon
325 degrees for 15 minutes.
